Homemade Hot Cocoa for One (in the microwave)
1+ 1/2 C milk
1 heaping t cocoa
2 heaping t wh. sugar
tiny dash of salt (adds very good flavor, but don't over-do!)
dash vanilla (add after heated)
Instructions:
Put milk in your favorite big mug. Add all other ingredients but vanilla.Heat in microwave for about 1 to 1+ 1/2 minutes. Add a splash of vanilla. Stir well. Top with whipped cream (optional). Get cozy with a warm blanket, good book & your warm drink. Enjoy! :)

This is my favorite hot cocoa recipe ever...an old stand by from my Amish days. I've had this recipe since before I was married and I still think its the best. Just can't handle Swiss Miss after being spoiled by this! It is also easy to mix up which is a big plus!

Cheesy Corn Dog Muffins Recipe
2 boxes Jiffy corn muffin mix (or copy cat recipe below)
2/3 cups milk
2 eggs
2 T veggie oil
3 hot dogs
3 slices american cheese
Instructions:
Mix together muffin mix, milk, eggs and oil. Grease 12 muffin cups. Cut the hot dogs in 4 pieces. Cut the cheese slices in 4 pieces. Place a small amount of batter in each muffin cup (just enough to cover the bottom), put in a hot dog piece, and a piece of cheese, then cover with a small amount of batter. Cheese should be covered, I used my spoon to spread the batter over the cheese. Bake at 400 for 15 minutes.

What a hit! I made these for my children and they went fast. I have 4 children, made 12 muffins, only had 2 left. Think they liked 'em? :) They did! And were tickled with the hot dog surprise inside. I was amazed at how easy these were to make, and quick, plus yummy! Will definitely make again!
Copy-Cat Jiffy Corn Muffins Recipe:
1+ 1/3 cups all-purpose flour
1 cup yellow cornmeal
6 T granulated sugar
2 T baking powder
1/2 t salt
4 T vegetable oil
2 egg
1+ 1/3 cups milk
Follow above instructions.

Grilled Ham Steaks and Pinapple Rings Recipe
- 1 can pinapple rings in 100% juice
- 1 Tbsp brown sugar
- 1 Tbsp butter
- 2 ham steaks
Instructions:
Preheat grill to med-high heat. Drain pineapple slices, gently place in plastic bag. Melt butter, add brown sugar, blend, then pour on top of rings, Seal bag, let set on counter to marinade approx. 20 minutes.
Place steaks on hot grill. Cook, turning once, till heated thru. Grill pineapple slice till grill marks appear and they are hot. Top steaks with pinapple and serve.

This was a big hit! I didn't know how the grilled pineapples would go over since I never made them before, but every last one was gobbled up in short order. I served these steaks with grilled sweet potatoes & onions (sprinkled w/ brown sugar at the table) and Earthquake Cake. We had a great dinner!
Amazing Apple Dumplings Recipe
- 2 Granny Smith Apples
- 2 cans of Cresent Rolls
- 2 sticks of Butter
- 1 & 1/2 Cup Sugar
- 1 tea. Vanilla
- Cinnamon, a sprinkling
- 1/2 of a 20 oz. bottle of Mountain Dew
Instructions:
Cut each apple into 8 wedges. Peel each wedge and roll into a triangle of cresent roll dough. Place in a single layer into a greased 9x13 pan.
Melt butter, add sugar, give a quick stir, add vanilla, another quick stir. Pour this sauce over the dumplings. Sprinkle with cinnamon. Pour the 1/2 bottle of Mountain Dew all around the edges of the pan.
Bake @ 350 for 40 min. Serve in bowls with vanilla ice cream and some of the warm sauce spooned over top. These will knock your socks off!!
